Recipe Ingredient

  • Chicken Drumettes:
  • 1kg of chicken drumettes
  • 5g salt
  • 1 tsp pepper
  • 1 tsp chili flakes
  • 1 tsp corn flour
  • 1 nos egg
  • Coating:
  • 300g rice flour
  • 300g corn flour
  • 5g salt
  • Chili Glaze:
  • 300g lingham's hot sauce
  • 100g brown sugar
  • 5g garlic, grated
  • 5g ginger, grated
  • 15g soy sauce
  • sesame oil, misc
  • Garnish:
  • sesame seed, toasted (misc)
  • spring onion, sliced (misc)
  • Mozzarella For Wrapping:
  • 200g Anchor Extra Stretch+ Mozzarella


    To Prepare Chicken Drumettes:
  1. In a mixing bowl, mix everything until well combined, allow to marinate for 4 hours or overnight
  2. To Deep Fry:
  3. Prepare enough deep fry oil and preheat to 160C
  4. In a bowl, mix coating ingredients together. Coat chicken drumettes with flour
  5. Deep fry chicken drumettes until golden brown
  6. Brush chili glaze on all sides on the drumettes
  7. Sprinkle sesame seeds and spring onion
  8. To Wrap with Mozz:
  9. In a non-stick pan, add mozzarella cheese and heat on medium heat
  10. When mozzarella starts to melt, keep stirring until cheese combines and fully melted
  11. Immediately wrap the drumettes and serve. Enjoy!
