Recipe Ingredient

  • Cookie:
  • 225g Anchor Unsalted Butter
  • 50g Sugar
  • 50g Brown Sugar
  • 50g Egg
  • 5g Vanilla Extract
  • 270g All Purpose Flour
  • 10g Dessicated Coconuts
  • 5g Salt
  • 80g Medjool Dates (paste)
  • Shredded Coconut, as needed


  1. Preheat oven to 175C.
  2. Place softened Anchor Unsalted Butter in a bowl, and mix with sugar and brown sugar until light and fluffy.
  3. Add the egg and vanilla essence and mix well.
  4. Sieve in the flour and mix well.
  5. Add in dessicated coconut and salt, and mix well.
  6. Add in date paste and mix well.
  7. Roll out cookie dough into 3mm sheet, and cut into diamond shapes.
  8. Sprinkle some shredded coconut onto the cookies before baking for 10-12 minutes.
