Recipe Ingredient

  • Cookies Dough:
  • 200g Anchor Unsalted Butter
  • 120g castor sugar
  • 120g brown sugar
  • 120g whole egg
  • 400g low protein flour
  • 50g cocoa powder
  • 12g baking powder
  • 250g almond flakes
  • 100g chocolate chips
  • Mochi:
  • 100g glutinouse rice flour
  • 10g corn flour
  • 20g castor sugar
  • 150g Anchor Full Cream Milk


    Cookies Dough:
  1. In a bowl, soften the Anchor Unsalted Butter then add in castor sugar and brown sugar, beat until creamy
  2. Add in the egg and beat until combined
  3. Add in the low protein flour, cocoa powder, and baking powder into the butter mixture then mix until become a cookie dough
  4. Add in the almond flakes & chocolate chips then mix well
  5. At this stage if the dough is too soft, cover and refrigerate for 20 minutes
  6. Scoop out the batter then wrap in around 10gm of mochi into the cookie, then put on the baking tray
  7. Bake in a preheated oven at 180C for 10 to 12 minutes
  8. Mochi:
  9. Mix all the ingredients together
  10. Cover the bowl with plastic wrap then microwave it in 1 minute
  11. After microwave, stir and mix it
  12. Repeat the method 2 and 3 until the Mochi becomes smooth
