- Sift the cornflour and flour into a bowl and mix in the peppercorns, salt and spices. Stir in the soda water until nearly mixed the batter should be thin but still a little lumpy. (If it seems too thick add more soda water).
- Heat the sun flour oil until shimmering. Dip the prawns into the batter and deep fry for approx. 1 minute. Transfer to a baking tray lined with kitchen roll and keep warm in a low oven.
- In the meantime mix together in a large bowl the chilli, watercress and been sprouts, season with salt and divide equally between 4 plates. Place a handful of fried prawns on top and drizzle soya sauce over the top. Serve immediately.
