Welcome to the ‘#HealthyEating’ series! #HealthyEating is launched to encourage everyone to love themselves and live a healthier life. In this quarter, we are sharing vegetarian and/or vegan breakfast/brunch recipes, Avocado & Tomato Toast. This is a great breakfast recipe to start your day!

Recipe Ingredient

  • 4 nos sliced bread (toasted)
  • some margarine
  • Avocado Toast Topping:
  • 1 nos ripen avocado (sliced)
  • Handful baby spinach
  • Pinch of black salt
  • Pinch of black pepper
  • Pinch of dried chili flakes
  • juice of 1/2 lemon
  • Tomato Toast Topping:
  • 140g cherry tomatoes (cut into 4)
  • Handful sweet basil leaves (roughly chopped)
  • Pinch of black salt
  • Pinch of black pepper
  • 1/2 nos lemon zest and juice

Instructions

  1. Spread some margarine on each side of the bread slices and toast them
  2. Tomato Toast:
  3. Combine all the ingredients for tomato toast in a bowl and mix it evenly.
  4. Divide into 2 equal portions and place them on the toasted bread.
  5. Avocado Toast:
  6. Place some baby spinach on the toast, followed by the sliced avocados.
  7. Season with some black salt, pepper and a squeeze of lemon juice,
  8. Enjoy!
