- 4-5 ripe mangoes
- 100g castor sugar
- 250ml water
- 30ml freshly squeezed lemon juice
- 2 egg whites, lightly beaten
- Peel mangoes and discard the seeds. Put mangoes into a blender and puree.
- Bring water and sugar to a boil and boil for about 5 minutes to dissolve the sugar. Leave the syrup aside to cool completely.
- Combine mango puree with the syrup, egg white and lemon juice. Pour mixture into a plastic container and freeze until it sets.
