Recipe Ingredient

  • 4-5 ripe mangoes
  • 100g castor sugar
  • 250ml water
  • 30ml freshly squeezed lemon juice
  • 2 egg whites, lightly beaten


  1. Peel mangoes and discard the seeds. Put mangoes into a blender and puree.
  2. Bring water and sugar to a boil and boil for about 5 minutes to dissolve the sugar. Leave the syrup aside to cool completely.
  3. Combine mango puree with the syrup, egg white and lemon juice. Pour mixture into a plastic container and freeze until it sets.
