Recipe Ingredient

  • 4 lamb cutlets, approx 300-350g
  • 1 tbsp olive oil
  • Combined:
  • 1¾ tbsp light soy sauce
  • 2 cloves garlic, finely crushed
  • 40g plain flour
  • Combined:
  • 1 tbsp UHT milk
  • 1 egg, beaten
  • Mixed well:
  • 100g breadcrumbs
  • 2 tsp paprika
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Trim off any excess fat from cutlets and pound lightly with a mallet to flatten.
  2. Marinate cutlets with soya sauce and garlic mixture for 1-1½ hours then coat marinated cutlets in plain flour. Next, dip in the egg and milk mixture then toss in the breadcrumbs mixture.
  3. Grease a round shallow baking tin with olive oil and arrange cutlets in the tin.
  4. Bake in turbo broiler on 180°C for 15 minutes on each side or until cutlets are golden brown and the meat is tender.
