Recipe Ingredient

  • 600g mutton fillet (sliced thinly)
  • Bamboo skewers (soaked in water for several hours)
  • Marinade
  • 6 shallots
  • 4cloves garlic
  • 1stalk lemongrass
  • 2tbsp meat curry powder
  • 2tbsp chilli powder
  • 1tsp coriander powder
  • ½tsp cumin powder
  • Seasoning
  • 2tbsp soft brown sugar
  • 1tbsp salt
  • 1tsp pepper
  • 1tsp ground black pepper
  • 2tbsp light soy sauce
  • ½tsp lime juice
  • 3-4tbsp coconut milk


  1. Blend marinade ingredients in an electric food processor until fine then combine with seasoning ingredients.
  2. Add mutton slices to the combined marinade. Mix well and leave aside to marinate for several hours. Thread each bamboo skewer with the marinated mutton slices.
  3. Arrange the skewered meat over a barbecue pit and grill until lightly browned or cooked through. Baste constantly with a little oil when grilling. Serve immediately with any satay sauce.
