Recipe Ingredient

  • 200ml egg white
  • 400g castor sugar
  • 20g cornflour
  • 100g blanched whole almonds (lightly roasted and roughly chopped)
  • 100g sultanas (soaked in rum)
  • 100g dark chocolate (roughly diced)
  • 70g glaced orange peel (finely diced)


  1. Whisk the egg white until fluffy. Gradually, add half the quantity of sugar. Continue mixing until you have a thick, shiny meringue.
  2. Stir the cornflour into the remaining sugar (200g).
  3. Stir together the chopped almonds, sultanas, chocolate pieces and glaced orange peel.
  4. Remove meringue from mixer, fold in sugar-cornflour mixture, then the remaining ingredients. Stir to combine.
  5. Pour into a non-stick paper-lined baking ring. Bake at 150° celsius for about an hour.
  6. Remove from the oven. Allow to cool on a rack before removing from the ring.
  7. To garnish, cover with whipped cream and chocolate curls.
