Recipe Ingredient

  • 500g cooked rice
  • 150g chicken meat, diced and marinated with 1/4 teaspoon oil and 1/4 teaspoon cornflour
  • 1 Chinese sausage, sliced
  • 1 Chinese liver sausage, sliced
  • 6 slices waxed duck
  • 3 slices ginger, cut into thin strips
  • Sauce ingredients:
  • 1 tablespoon soy sauce
  • 1/2 tablespoon oyster sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon chicken stock granules
  • 1 tablespoon Chinese cooking wine
  • 2 tablespoons chicken stock
  • 1/4 teaspoon sesame oil
  • 1/4 teaspoon thick soy sauce
  • Spring onions, for garnish


  1. Place the rice in a casserole or claypot. Place the marinated chicken on the rice, in the centre.
  2. Place the Chinese sausages and waxed duck slices around the chicken. Top the chicken with the ginger strips. Steam casserole dish for about 15 minutes or until chicken is cooked. If using claypot, cook covered, on the fire.
  3. In a small saucepan, bring the sauce ingredient to a quick boil. Remove from heat and pour the sauce onto the rice. Garnish with spring onions.
  4. To serve, mix the rice and meats well before portioning out.
