Recipe Ingredient

  • 1 kg meaty beef bones
  • 1 onion, halved
  • 1 stick celery, chopped
  • 150g carrots, chopped
  • 2 bay leaves
  • 1 tsp black peppercorns
  • 2 litres water
  • 2 litres water, extra


  1. Combine beef bones and onions in a baking tray and bake in a preheated oven at 200 ºC for 40 minutes until bones are well browned and onions turn soft and brown.
  2. Put bones and onion into a deep saucepot. Add the rest of the ingredients. Bring to a boil, then simmer uncovered over a gentle heat for two hours. Add the extra water and continue to simmer uncovered for another hour. Strain stock before use.
