Recipe Ingredient

  • Spices (A) - ground and combined:
  • 8 shallots
  • 3 cloves garlic
  • 3 fresh red chillies
  • 3 dried chillies, soaked until soft
  • 3/4 tsp belacan stock granules
  • (B):
  • 75g mashed sweet potatoes
  • 75g gula Melaka
  • 1½ tbsp tamarind, mixed with 50ml water and squeezed for juice
  • 600ml water
  • 125g toasted peanuts, pounded
  • 3/4 tsp salt or to taste
  • 3 tbsp oil

Instructions

  1. Heat oil in a saucepan and fry ground ingredients until fragrant.
  2. Add in (B) and simmer until gravy turns thick.
  3. Toss rojak ingredients with the sauce.
