In this ‘Soy Bean 3 Ways’ series, turn your homemade soy milk into these refreshing soy puddings!

Recipe Ingredient

  • 300g soybeans
  • 2000ml water
  • 120g sugar
  • 6nos pandan leaves
  • 8g konnyaku jelly powder

Instructions

  1. Wash and soak the beans overnight. It should double the size the next morning
  2. Rinse and drain water. Rub and remove as much skin as possible
  3. Once done, blend the soaked beans and water. Transfer the blended mixture over to a nut milk bag and strain the mixture into a pot. Set the pulp aside for another recipe
  4. Add pandan leaves to mixture and bring it to a boil with medium to low heat for 15-20 mins. Make sure to stir occasionally to avoid burning at the bottom of the pot.
  5. Once boil, lower heat, remove the pandan leaves and gradually pour the jelly powder and sugar into the mixture. Stir till it dissolves.
  6. Then turn off heat and pour the mixture into your desired moulds/bowl. Let it chill for at least 2 hours before serving. Enjoy!
