Recipe Ingredient

  • 170g shitake mushroom
  • 170g button mushroom
  • 170g oyster mushroom
  • 30g basil
  • 8g thyme
  • 8g tarragon
  • 8g oregano
  • 7g rosemary
  • 7g sage
  • 50g garlic, crushed
  • 170g onion, chopped
  • 200ml white wine
  • 3l chicken stock
  • 70ml cream
  • 50g spring onion, chopped
  • 200ml olive oil
  • Seasoning to taste


  1. Heat oil in a pot. Brown garlic, onion andmushrooms. Add fresh herbs. Deglaze with white wine. Then add chicken stock and reduce to the desired thickness. Add cream and reduce again. Season to taste.
  2. Mix the soup in a blender. Ladle into a bowl. Garnish with remaining cream and spring onions.
  3. Note: Parlanti said this soup is a favourite with Prime Minister Datuk Seri Dr. Mahathir Mohamad.
