Recipe Ingredient

  • 2tbsp oil
  • 10g ginger, sliced
  • 1clove garlic
  • 2stalks lemongras, slightly crushed
  • 4cm cinnamon stick
  • 4 cardamom pod, slightly crushed
  • 4 cloves
  • 1 onion, halved and sliced
  • 2tbsp briyani rice spice mix, store bought
  • 1tsp chilli powder
  • 1/2tsp turmeric powder
  • 100g chicken drumstick meat, cubed
  • 350g rice, rinsed and drained
  • 4 pandan leaves, knotted
  • 450ml water
  • 100ml evaporated milk
  • 100g long beans, sliced
  • For Seasoning:
  • 1tbsp chicken stock powder
  • 1tsp salt
  • 1/4tsp sugar
  • 1/4tsp black pepper ground

Instructions

  1. Heat the oil in a wok and fry the ginger, lemongrass and garlic until fragrant. Add the spices and onion, followed by the briyani spice mix, chilli powder and turmeric powder. Add the chicken and seasoning, and mix well. Sprinkle in a little water to moisten the mixture.
  2. Transfer the fried ingredients into an electric rice cooker pot. Add the rice and pandan leaves, and pour in water and evaporated milk. Cook rice.
  3. When rice is done, add the long beans, fluff up the rice, and allow to stand for 10 to 15 minutes before serving.
