Recipe Ingredient

  • 700-750g mud crabs
  • 1 tbsp Shao Hsing Hua Tiau wine
  • 1 tbsp ginger wine
  • 2 egg whites
  • 4-5 tbsp water
  • Seasoning:
  • 1 tsp fish sauce
  • 1/2 tsp sesame oil
  • 1/4 tsp pepper
  • 1 tsp sugar
  • 1 tsp sesame oil

Instructions

  1. Rinse the crabs and cut into halves, then clean and drain well. Pour combined ginger wine and Shao Hsing Hua Tiau wine over the crabs and leave to marinate for 1-2 minutes.
  2. Arrange crab pieces in a heatproof dish. Pour in seasoning ingredients and steam over high heat for 14-15 minutes.
  3. Mix egg whites with water and stir lightly to combine. Next, pour over the steamed crabs. Continue to steam the crabs over high heat for 2-3 minutes.
  4. Serve at once.
