Recipe Ingredient

  • 650g pineapple - remove skin
  • 3cm piece cinnamon stick
  • 3 cloves
  • Enough basic syrup or to taste
  • Ice cubes or shaved ice

Instructions

  1. Chop pineapple flesh into cubes and liquidise to get the juice. Put juice aside and retain the pulp.
  2. Put pineapple pulp in a deep saucepan with one and a half cups water, cloves and cinnamon stick. Bring to the boil then simmer for 20 minutes. Strain, discard the pulp and spices and cool the pineapple syrup.
  3. Add the cooled syrup to the pineapple juice and combine enough basic syrup. Chill well in the refrigerator.
  4. To serve, pour into individual serving glasses and top up with crushed ice and add garnishing of your choice.
