Chocolate cupcakes are a childhood favourite and comfort food to satisfy a sweet tooth craving. These cupcakes are topped chocolate frosting with a bit of coffee flavour. Simple ingredients that makes a rich chocolatey dessert. It’s quick and easy to whip up too!

Recipe Ingredient

  • Chocolate Cupcake:
  • 280 g All Purpose Flour
  • 60 g Cocoa Powder
  • 1 ½ tsp Baking Soda
  • 200 g Sugar
  • 90 g Brown Sugar
  • 300 g Water
  • 180 g Corn Oil
  • 2 tsp Vanilla Essence
  • Mocha Frosting:
  • 230 g Margarine
  • 315 g Icing Sugar
  • 40 g Cocoa Powder
  • 48 g Soy Milk
  • 8 g Mocha Essence

Instructions

    Chocolate Cupcake:
  1. Preheat the oven to 160°C.
  2. In a large mixing bowl, add flour, cocoa powder, baking soda and sugar and stir briefly.
  3. In a separate mixing bowl, add water, oil and vanilla. Add water mixture to dry ingredients and stir to combine. Pour into prepared paper cups and bake for 25 minutes or until a skewer inserted in the middle comes out clean.
  4. Leave the cupcakes to cool before topping it up with frosting.
  5. Mocha Frosting:
  6. Place margarine in a large mixing bowl and beat with hand whisk until smooth and creamy.
  7. Add icing sugar, cocoa powder and soy milk, and then beat again until smooth.
