Bell Pepper and Thyme Couscous


80g couscous
25g onion, chopped
20g green pepper, diced
20g yellow pepper, diced
20g red pepper, diced
5g garlic, chopped
1.5g fresh thyme
150ml chicken stock
10ml olive oil
seasoning to taste


Warm olive oil in a pot. Add garlic and let brown. Add couscous and thyme, mixing all together thoroughly. Pour in chicken stock and add peppers. Season to taste and let simmer. Remove from heat. Cover and reserve for use later.
