- 1 piece young ginger, approx 8cm
- 70ml vinegar
- 1 cup water
- 1½-2 tbsp castor sugar
- 3/4 tsp salt
- A few drops red food colouring
- Slice ginger thinly through a fine grater.
- Combine all the other ingredients in a saucepan and bring to a boil.
- Add ginger slices and continue to simmer until the water is reduced to about half the amount and the colouring has been absorbed by the ginger.
- Remove and set aside to cool.
