Recipe Ingredient

  • 1 piece young ginger, approx 8cm
  • 70ml vinegar
  • 1 cup water
  • 1½-2 tbsp castor sugar
  • 3/4 tsp salt
  • A few drops red food colouring


  1. Slice ginger thinly through a fine grater.
  2. Combine all the other ingredients in a saucepan and bring to a boil.
  3. Add ginger slices and continue to simmer until the water is reduced to about half the amount and the colouring has been absorbed by the ginger.
  4. Remove and set aside to cool.
