Recipe Ingredient

  • 250g dates, chopped
  • 170ml hot water
  • 175g soft brown sugar
  • 1 egg, lightly beaten
  • 4 tsp baking powder
  • 175g wholemeal flour
  • 75g plain flour, sifted
  • 1 tsp ground mixed spices
  • Topping:
  • 1 tbsp demerara sugar

Instructions

  1. Put dates in a bowl, pour in hot water and leave to soak for two to three hours.
  2. Grease, line and grease a 25 x 15 x 7cm loaf tin. Preheat oven to 180 ºC.
  3. Put sugar into the date mixture. Stir until sugar has dissolved completely. Add in beaten egg and mix well.
  4. Combine flour, wholemeal flour, mixed spices and baking powder in a mixing bowl and add into date mixture.
  5. Turn mixture into prepared tin. Sprinkle with demerara sugar on the top. Bake in preheated oven for one to one and a quarter hours.
  6. Turn out loaf onto a wire rack to cool. Slice and serve with butter.

    Hello can I use bread flour instead of whole meal flour for the date loaf …tks

      Hi Ruby, it is possible but we would not recommend it as the result could be a bread that is denser as bread flour has higher protein content. Replacing whole meal flour with all purpose flour will also result in a fluffier bread. This is because different flours have different protein content.
