Recipe Ingredient

  • 275g flour
  • 1 tsp baking powder
  • 175g butter
  • 175g castor sugar
  • 3 eggs
  • Combine:
  • 100ml milk
  • 125ml orange juice
  • 1 tsp lemon juice
  • 1 tsp vanilla essence
  • 3 tsp grated orange rind


  1. Sift flour and baking powder together. Preheat oven to 180 ºC. Grease the sides of a 23cm round or square cake tin and line base with non-stick parchment.
  2. Beat butter and sugar until creamy, light and fluffy. Add eggs one at a time, beating well after each addition. Add in orange rind.
  3. Fold in sifted dry ingredients, alternating with the combined liquid mixture. Pour mixture into prepared tin and bake in preheated oven for one hour or until a skewer inserted in the centre of the cake comes out dry.
  4. Cool cake in tin for five minutes before turning it out onto a wire rack.
