Recipe Ingredient

  • 225g self-raising flour
  • 20g milk powder
  • 1/2 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 175g butter
  • 160g castor sugar
  • 3 eggs, lightly beaten
  • 1/2 tsp vanilla essence
  • 1/2 tsp orange essence
  • 2½ tbsp orange juice
  • 1 tsp lemon juice


  1. Sift flour, milk powder, baking powder and bicarbonate of soda together.
  2. Line two pastry tins with paper cups. Cream butter and sugar until light and fluffy. Beat in the eggs one at a time until well combined.
  3. Beat in essences, then fold in the sifted dry ingredients alternately with the orange and lemon juice.
  4. Fill paper cups with the mixture. Bake in preheated oven at 170°C–180°C for 15–20 minutes or until well-risen and golden in colour. Serve the cupcakes warm.
