Recipe Ingredient

  • 175g butter
  • 150g brown sugar
  • 1 tsp vanilla essence
  • 3 large eggs
  • 75g golden syrup
  • 1 tbsp ginger juice
  • Sift:
  • 300g self-raising flour
  • 1 tsp bicarbonate of soda
  • 4 tsp ground ginger
  • 1 tsp ground cinnamon
  • 180ml plain UHT milk


  1. Cream butter with sugar and vanilla essence until pale and fluffy. Gradually beat in eggs one at a time until well combined then add in golden syrup. Add in ginger juice and continue to cream for a while.
  2. Stir in sifted dry ingredients, alternating it with the milk. Pour batter into a prepared pan and bake in a preheated oven at 170°c for about 50-60 minutes or until it is cooked through when tested with a skewer. Stand cake in the pan for 5 minutes before turning onto a wire rack to cool.
  3. Preparation of pan: Grease pan well and sprinkle with almond flakes at the bottom.
