Recipe Ingredient

  • 450-500g fruits (choose any fruits according to your liking)
  • 2 tbsp sugar
  • 2 tbsp lemon juice
  • 1 tsp vanilla essence
  • 220g all purpose flour
  • 1 tsp baking powder
  • 20g corn flour
  • 115g salted butter
  • 170g sugar
  • 3 eggs
  • 60g plain yogurt
  • 1 tbsp grated lemon
  • 1 tsp vanilla essence

Instructions

  1. 1. Mix all the fruits, sugar, lemon juice and vanilla essence together and keep aside.
  2. 2. Preheat oven at 160 degrees Celsius. Grease and layer the pan (27cm x 22cm) with a baking paper.
  3. 3. Beat the sugar and butter until light and creamy till about 3 to 4 minutes.
  4. 4. Add the yogurt and mix again.
  5. 5. The grated lemon and vanilla essence is added into the batter.
  6. 6. Add the eggs one at a time and mix well.
  7. 7. Lastly add in the sieved flour (all purpose flour, baking powder and corn flour).
  8. 8. Once done, place the batter into the prepared pan and level the batter.
  9. 9. Arrange all the fruits on top of the batter.
  10. 10. Bake the cake at 160 degrees Celsius for 40 to 45 minutes. Can also use a cake tester to test if the cake is well baked.
  11. 11. Remove the baked cake from the oven and sprinkle icing sugar on to the top of the fruits.
