This recipe is best with
- 125g unsalted butter (softened)
- A pinch of salt
- 125g icing sugar
- 1/2 no lemon (zest and juice)
- 1 tsp vanilla extract
- Mix butter, sugar and salt and cream until light and fluffy (pale in colour).
- Add in the zest, juice, vanilla and continue to cream till smooth and creamy texture for 3- 5 minutes using medium speed.
- Butter cream is ready to be used as filling for macarons.
