Recipe Ingredient

  • 125g superfine flour
  • 50g cornflour
  • 1/2 tsp baking powder
  • 1 tbsp fennel powder
  • 1/4 tsp salt
  • 75g castor sugar
  • 80g butter
  • 3 tbsp hot water
  • Topping:
  • Extra toasted fennel seeds


  1. Lightly grease baking trays and preheat oven at 175°C.
  2. Sift flour and cornflour into a mixing bowl. Add fennel powder, baking powder, salt and sugar to mix.
  3. Combine butter with hot water then add to the flour mixture. Lightly knead into a soft dough.
  4. Lightly form dough into cherry-sized balls. Dip into toasted fennel seeds and place on prepared trays. Press down lightly with a fork. Bake for 15 to 17 minutes or until lightly browned in colour. Allow to cool for one minute on the trays before transferring onto wire racks to cool completely.
