Recipe Ingredient

  • 180g butter
  • 75g castor sugar
  • 1 egg
  • 3/4 tsp vanilla essence
  • 220g plain flour
  • 1/2 tsp bicarbonate of soda
  • 30g cornflour
  • 30g rice flour
  • 40g almonds
  • 40g hazelnuts
  • 50g choco chips


  1. Beat butter and sugar until light. Add in egg and essence. Continue to beat until creamy.
  2. Sift plain flour and bicarbonate of soda together and add them to the creamed with the cornflour and rice flour.
  3. Blend almonds and hazelnuts coarsely in a food processor. Mix them with the rest of the ingredients and combine into an even dough.
  4. Roll out dough to 4mm thick and cut into rectangular pieces or any desired shape of your choice. Prick with a fork.
  5. Bake in a preheated oven at 170°C for 20 minutes or until golden brown.
