Recipe Ingredient

  • 150g dried chillies
  • 200g coriander seeds
  • 75g cumin seeds
  • 75g fennel seeds
  • 30g peppercorns
  • 30g turmeric
  • 3 cardamom pods
  • 5 cloves
  • 5cm piece cinnamon bark


  1. Wash all the spices and dry them in the sun or roast them in a dry pan or wok. Cool well, then store the ingredients in an airtight container.
  2. Once they´re dried, you can either send the ingredients to a mill or liquidise them yourself.
  3. For added flavour, use galangal, lemon grass, belacan and candlenuts when cooking your dish.
