- 250g Anchor Salted Butter Pat, soften
- 170g castor sugar
- 2nos egg yolk
- 2g vanilla essence, 1/2 tsp
- 200g corn flour
- 160g low protein flour
- 2g baking powder, 1/2 tsp
- 70g ground almond powder
- 70g dried cranberry
- 110g cornflakes
Instructions
- In a mixer, beat the butter with sugar until smooth & creamy
- Mix in egg yolk & vanilla essence together, beat once more until creamy
- Add in corn flour, low protein & baking powder, mix it slowly
- Then fold in ground almond powder, cornflakes & cranberry
- Preheat an oven at 180C
- Using dry & clean hands, weigh each cookie at 10gm/pcs
- Arrange all shaped cookies on baking tray, bake in preheated oven for 15 minutes until crispy & golden brown
- Remove from oven, let it cool down completely before packing into a container. Enjoy!
