In this quarter, we are sharing vegetarian and/or vegan dessert/bread recipes, Pineapple Spheres. A great alternative to the OG version if you can’t take eggs and dairy 🙂

Recipe Ingredient

  • Dough:
  • 190g plain flour
  • 20g cornstarch
  • 20g Bird's custard powder
  • 45g icing sugar
  • 1/4tsp salt
  • 15g unsweetened soy powder
  • 100g cooking coconut oil
  • 60g Naturel Lite margarine
  • 200g of pineapple jam
  • 'Egg' Wash:
  • 30g Naturel Lite margarine
  • 30g maltose
  • some poppy seeds for deco (optional)

Instructions

  1. Divide the pineapple jam to 5-6g each and set aside in the fridge
  2. Meanwhile, combine all dry ingredients before adding the margarine and oil
  3. Once formed dough, divide to 15g each and fill with the jam
  4. Make the glaze by gently heating up the margarine and maltose till combined
  5. Glaze the spheres and bake at 160-170 deg C for 20-23 minutes. Make sure to check the bottom. And the poppy seed deco is optional!
  6. Tips: Don't be surprised when you see cracks on the cookies, they will subside once it cools
