Recipe Ingredient

  • Kaya
  • 2nos egg yolks
  • 100ml Anchor UHT Extra Yield Cooking Cream
  • 30g gula melaka (blend into powder)
  • 20g brown sugar
  • 4nos pandan leaves (knotted)
  • Blue Layer Kuih
  • 1cup glutinous rice (washed and soaked at least 1 hr)
  • 1/2cup Anchor UHT Extra Yield Cooking Cream
  • 1/2cup blue pea flower juice
  • 1/8tsp salt
  • pandan leaves (knotted)
  • White Layer Kuih
  • 1cup glutinous rice (washed and soaked at least 1 hr)
  • 1/2cup Anchor UHT Extra Yield Cooking Cream
  • 1/2cup water
  • 1/8tsp salt
  • pandan leaves (knotted)
  • Optional
  • 2tsp coconut oil

Instructions

  1. To make kaya, mix egg yolk and Anchor Cooking cream. Hand whisk a little. Strain the mixture.
  2. Mix gula melaka and brown sugar into egg yolk mixture. Transfer this mixture into a non stick pot/bowl. Add Pandan leaves. Double boil mixture in medium low heat. Using a wooden spatula, keep stirring until thick consistency. Leave to cool.
  3. To make kuih, mix all ingredients for blue layer in a bowl.
  4. Mix all ingredients for white layer in a another bowl .
  5. Steam both rice on high heat for 30minutes.
  6. Once rice cooked, add 1tsp coconut oil into blue layer rice and 1tsp coconut oil into white layer rice. Mix well.
  7. Put one layer of white rice into desired mould, press hard. Put another layer of blue rice on top of white layer rice. Press hard to stick the rice together. Remove/ cut into desire size. Top with kaya. Serve.
