Recipe Ingredient

  • Filling
  • 300g Mascarpone cheese
  • 40g sugar
  • 3 egg yolks
  • 30g whipping cream
  • 30g choc (grated)
  • Lady Finger
  • 3 egg yolks
  • 50g icing sugar
  • 3 egg whites
  • 50g sugar
  • 40g corn flour
  • 40g flour
  • Lady Finger
  • 200g water
  • 120g sugar
  • 2tbsp Nescafe
  • 1tbsp coffee essence


    Tiramisu Mixing
  1. In a sauce pan combine the sugar and 70ml water. Bring to a boil, make sure the sugar is completely dissolved and cook to 102 degrees Celcius.
  2. Meanwhile, in a mixer fitted with a whisk attachment, whip the eggs and yolks, until they become fluffy in texture. Slow down the speed of the mixing and slowly add the hot syrup to the eggs while whipping.
  3. Add the mascarpone cheese in the mixture and mix for 60 seconds only.
  4. Then mix in the whipping cream.
  5. Lady Finger Mixture
  6. Beat egg yolks with icing sugar until the yolks become fluffy.
  7. Beat egg white with icing sugar until become meringue, then mix with the egg yolk mixture.
  8. Add Corn Flour and Flour.
  9. Use the piping bag and pipe the mixture on baking tray like finger.
  10. Bake at 190C for 10 - 11 minutes.
  11. Coffee Syrup Mixture
  12. Boil water and sugar, and then add Nescafe powder and coffee essence.
  13. Final Mixture
  14. Dip Lady Finger in coffee syrup mixture, then remove and place in serving glass.
  15. Pipe the tiramisu mixture and squeeze a layer on top of the Lady Finger in serving glass.
  16. Repeat steps 1 and 2 until the glass is full.
  17. Place in chiller for 2 hours before serving.
