Prawn Fritters

  1. Shell prawns but leave tails intact. Marinate prawns lightly with a dash of salt and pepper and leave aside for 30 minutes.
  2. Combine flour, rice flour, milk powder, baking powder, bicarbonate of soda, pepper, salt, just enough water and oil to make a fairly thick batter.
  3. Dip seasoned prawns into batter, up to the tail. Fry in hot oil till fritters turn golden and crispy.
  4. Serve fritters with sliced chillies in worcestershire sauce.
