- 10–12 fresh red chillies
- 3 bird´s eye chillies
- 5–6 cloves garlic
- 3–4cm piece young ginger
- 1/2 tsp salt
- 1/2 tbsp sugar
- Juice of two small limes (kat chye or limau kasturi)
- 2 tbsp melted chicken fat (taken from your steamed chicken)
- Combine all the first seven ingredients together in an electric blender.
- Process until just fine then stir in chicken fat to mix.
- Adjust seasonings to your desired taste.
