Recipe Ingredient

  • 10 large chillies seeded
  • 10 cloves of garlic peeled
  • 20 shallots peeled
  • 4" ginger root peeled
  • 4" fresh tumeric peeled
  • 2 tomatoes, seeded
  • 1-tablespoon coriander seeds
  • 10 candlenuts
  • 1-teaspoon belacan
  • 4 tablespoons oil
  • 2 stalks lemongrass bruised
  • 3 tablespoons tamarind juice

Instructions

  1. Put all spice ingredients in a blender.
  2. Heat the oil in a pan, put in the stalks of lemongrass and the blended spices.
  3. Fry till aromatic and golden brown.
  4. Add the tamarind juice.
  5. Cool and use as needed.
