Recipe Ingredient

  • 500g french beans, diced
  • 2 medium onions diced
  • 1 tbsp ginger, diced
  • Spice Mix
  • 1/2 tsp cumin
  • 1/2 tsp fennel
  • 1/2 tsp mustard seeds
  • 2 dried chillies, broken into pieces
  • 2 sprigs curry leaves
  • 1 cup fine grated coconut
  • oil
  • salt to taste

Instructions

  1. Heat oil and fry the spices, onion, ginger, dry chillies and curry leaves.
  2. Fry the onions till slightly golden brown and add the diced beans to it.
  3. Coat the beans evenly with the spices and add salt.
  4. Lower the heat and add the grated coconut, stirring continously. This is to prevent the coconut from burnibg and sticking to the pan.
  5. Remove from heat when beans are cooked. Serve hot.
