- 600gm squid, cleaned
- 125gm rempah
- 5 shallots peeled & sliced
- 3 large chillies seeded and sliced
- 1 cup water
- 5 sprigs lemon basil
- 20gm-fried shallots for garnish
- 1-tablespoon limejuice
- Salt & pepper to taste
- 3 tablespoons oil
- Heat oil in a pan. Add shallots, chillies and squid. Sauté for 2 minutes.
- Add rempah and sauté a further minute.
- Add water, basil, seasoning and fried shallots.
- Bring to the boil and serve.
