Recipe Ingredient

  • 200g minced pork or chicken
  • 1 tbsp soaked dried scallops, shredded
  • 20g salted fish, diced and deep fried
  • 1 salted egg yolk, mashed and chopped
  • Marinade
  • 1/8 tsp pepper
  • 1/8 tsp sugar
  • 1/2 tsp sesame oil
  • 1 tsp cornflour
  • Sauce ingredients
  • 1/4 tsp pepper
  • 1/4 tsp sugar
  • 1/2 tsp light soy sauce
  • 1/2 tsp Shao Hsing Hua Tiau wine
  • 1/2 cup fresh chicken stock
  • Garnish
  • 1 tbsp chopped spring onion and coriander leaves
  • 1 tbsp shredded ginger

Instructions

  1. Combine minced meat and shredded dried scallops with marinade. Throw mixture against a bowl continuously for about a minute (this is to improve the texture of the meat).
  2. Spread mixture in a heat resistant bowl or container. Sprinkle over with prefried salted fish and salted egg yolk. Add combined sauce ingredients and stir to mix.
  3. Steam over rapid boiling water for 10-15 minutes. Add garnishing ingredients and serve at once.
