Steamed Prawns

  1. Cut through the prawns from the back straight down the centre up to the tail. Open up the prawns flat and remove the vein.
  2. Lightly season the prawns with salt and freshly cracked black pepper. Add a little garlic, red chilli and coriander leaves.
  3. Put a good dash of seasoning over and arrange the prawns on a clean shallow dish.
  4. Steam over rapid boiling water over a high heat for 6-7 minutes or until prawns are just cooked.
  5. Serve immediately.
