  1. Bring water to a boil. Add in spareribs, cuttlefish, dates and scallops. Bring to a boil.
  2. Put in winter melon and boil. Reduce heat once it has come to a boil. Simmer for 1–1½ hours until meat is tender and soup has the beautiful aroma of the cuttlefish. Season to taste.
