Recipe Ingredient

  • Mutton Haleem:
  • 1.5 kg Mutton with bone
  • 200g Ghee
  • 3 Onions
  • 2 tbsp Ginger garlic paste
  • 100g Green Chilies
  • 4 tbsp Lemon Juice
  • Salt to taste
  • Pulses or Lentils
  • 100g Whole or Broken Wheat
  • 50g Moong Dal 50 gms,
  • 50g Red lentil / Masoor Dal
  • 50g Split Pigeon Peas / Arhar Dal
  • 50g Black Gram / Urad Dal
  • 50g Rice
  • For Frying:
  • 3 Onions (large)
  • 50g Cashew nuts
  • Oil, for deep frying spices
  • 1 no Cinnamon stick
  • 2 no Black Cardamom
  • 4 no Green Cardamom
  • 5 no Cloves
  • 5 no Kebab Chini
  • 1/2 tsp Nutmeg Flower
  • 10 no Rose petals

Instructions

  1. Take mutton and trim if any excess fat and thoroughly wash and clean the mutton.
  2. Slice the onions and slit green chilies and keep them aside.
  3. Heat ghee in a thick bottomed pressure cooker and add cinnamon stick, black cardamom, green cardamom, clove, kebab chini, nutmeg flower, and temper.
  4. Now add sliced onions to the tempered spices and sauté until translucent
  5. Add ginger-garlic paste and cook it till it releases oils from the side of the mixture.
  6. Add mutton chunks and mix everything well
  7. Now add salt to taste and slit green chilis according to your palate.
