Recipe Ingredient

  • 1/2 lemon or lime (zested)
  • 80 g sugar
  • 3 egg yolks
  • 15 g corn flour
  • 3 eggs
  • 135 ml mango puree
  • 80 g sugar
  • 1 tsp kaffir lime leaveschopped
  • 100 g margarine


  1. Grate the zest over the sugar and mix in the egg yolks. Mix in the corn flour and then the eggs.
  2. In a saucepan, heat mango puree, sugar and kaffir lime leaves. Pour the egg mixture into the pan and bring to a boil, whisking constantly. Remove from heat and mix in the margarine.
  3. Pour into a glass jar and chill. Serve with toast, scones or Danish pastries.
